spiced Banana Loaf
Ingredients

250g/9oz self-raising flour

70g/2½oz soft brown sugar (you can also use dark brown)

1 tsp salt

1 tsp baking powder

2 tsp ground cinnamon

1 tsp mixed spice
-
40g/1½oz raisins
-
40g/1½oz shelled unsalted pistachios (whole pieces)

100g dark chocolate (at least 70% coco solids) chopped into small pieces. Or use good dark chocolate chips

60ml/2fl oz vegetable oil (neutral oil)

3 free-range eggs, beaten

1 tsp vanilla extract
Method

Preheat the oven to 180C/170C Fan/Gas 4 and line a 900g/2lb loaf tin with baking paper.

In a large bowl (big enough to add more ingredients later), mix the flour, salt, baking powder, cinnamon, mixed spiced, raisins and pistachios together. Basically, mix the dry ingredients together

In a separate bowl, mix the eggs and sugar first. Make sure to get rid of any sugar lumps (use the spoon/spatula). Then add the mashed bananas, oil, and vanilla extract. So add the wet ingredients to the dry ingredients and mix until combined.

Now my favourite bit. Stir in the small chocolate pieces/chips into the mixture.

Then pour into the prepared tin and bake for 35–40 minutes, or until a skewer inserted into the centre of the cake comes out a little moist, but clean. Oh your home will smell sweet of banana bread.

Rest until the loaf in the tin for about 30 minutes. Then take the loaf out the tin and rest on the cooling rack. Once the loaf has cooled a bit, put the kettle on or coffee machine and severed with a nice cup of tea/coffee or enjoy on its own!
